We'll investigate the medicinal benefits of vinegar, how it's been used traditionally, and what kinds of delicious brews we can make by infusing our vinegar with herbs and fruits from the garden. Whether you're looking to make a tasty "mocktail" or a nonalcoholic way to take herbal medicine, this class will answer your questions and send you home with your own delicious herbal vinegar! Together with Red Wagon founder Julie Rubaud, participants will make Herbes Salées, a traditional Quebecois way to preserve herbs, herb butters and herb salts. We will include information on drying and freezing herbs as well. Students will leave with lots of new recipes and preparations for their kitchen. Registration required.

Gain the skills and confidence that you need to grow a successful Cannabis crop in your own backyard. Red Wagon staff member Chad Donovan will talk you through the different aspects of Cannabis cultivation with a focus on what you should be doing in early July to set you up for a bountiful harvest. You’ve germinated your seeds, hardened them off, and finally planted them outside. Now what? Chad will focus on fertilizing, scouting for pest and disease, and most importantly pruning and supporting. Registration required.

As the garden bounty rolls in, it's time to start harvesting and drying your tea herbs for maximum potency and flavor all year long. In this hands-on class herbalist and Red Wagon staff member Sophie Cassel will talk about timing the harvest, setting yourself up for success, troubleshooting, and different methods for drying and processing the leaves, stems and flowers of medicinal herbs.
